The topic

Althea officinalis(Linné, 1753)

This is the common marshmallow, a perennial plant often found in temporary waterlogged areas of Europe and Northern America. It is very well known for its mucilage (mainly coming from the root system) from which, in the past, a jelly-like substance was prepared for pastry and marshmallow. Mucilage is also used in combination with eggs whites and sugar to prepare a delicious foamy meringue.

A few information on the plant

Characters of the Malvales are:

• Palmate venation of the leaves (generally, three principal veins from the bases of the leaves)
• Mucilage canals inside the tissues
• Presence of hairs on the vegetative part of the plant
• Stipules at the bases of the leaves
• Presence of a an epicalyx
• Calyx of five attached sepals
• Corolla of five petals pink to white
• Attached stamina in a column through which the pistil emerges.

The plant can reach up to two meters of height (usually one ton one five). The plant is perennial through its root system which carries buds for the regeneration of the plant.

The plant is often used in medicine: its mucilage is emollient, laxative and appetite stimulating. It is also used in the pastry.
